A journey of taste through game, herbs and forest memories
It begins with the fragrance of rye and the delicacy of smoked ricotta, enriched with wild herbs. Then comes the richness of artisanal game cold cuts, accompanied by rustic bread and the spiced sweetness of wild apples.
The venison tartare blends freshness and tradition with Valtellina pesteda and the crunch of seeds, while the mountain egg celebrates the pastures with Bitto cheese and sfrigol, or with the noble flavor of golden porcini mushrooms.
The pumpkin tortello meets the strength of wild boar ragout and chanterelles, while the venison tagliata, glazed with grape must, is elevated by soft polenta, toasted hazelnuts, and mustard sprouts.
The journey concludes with the “Forest Path”: chocolate, red fruits, and caramelized pine nuts, like a sweet memory among the branches and aromas of the woodland.
